Moreover, sweet potatoes can boost the immune system and give the body the necessary energy it needs for it to function properly. On top of that, the iron in the sweet potatoes is crucial for the production of blood cells, which makes this food a must to eat.

Not only are the sweet potatoes good for metabolizing the protein, but they can also improve the muscle, nerve, and healthy artery functions, due to the magnesium they contain. So, they are safe for people with diabetes, since they won’t raise the blood sugar and affect the bloodstream.

Some people believe that sweet potatoes can even protect the body from the effects of aging and cancer. Even though there is still no proper cure for cancer, these potatoes might prove beneficial in a regular diet.

Instructions

Before you begin preparing your recipe, preheat the oven to 400 degrees Fahrenheit. Next, oil up the muffin tray and poke some holes in the potatoes. Put the potatoes on the middle rack of the oven and cook them for one hour or until they get soft.

When they are done, let them cool down a bit and peel of the skin.

Place the potatoes in a bowl and add the olive oil, maple syrup, and coconut milk. Start mixing them all together until you get a soft mixture. After that, in a different bowl, put all the dry ingredients, mix them, and sprinkle them all over the sweet potatoes.

Now, put the batter in the muffin pan and fill the pan right before it is half full. Leave some space for the batter to rise. Lastly, cook everything for half an hour and see if it is prepared after you have poked it with a toothpick.

If the mixture doesn’t stick on the toothpick, your muffins are ready. Enjoy!
