Most people forget their veggies, and we already know someone who hates garlic. Well, this soup combines a healthy portion of greens and garlic. Broccoli, asparagus, and garlic taste great when combined in a soup, and the gut-healing bone broth adds a few more benefits.

Gut-healing garlic asparagus broccoli soup

- 1 tbsp olive oil
- ½ cup onion, diced
- ½ lb. asparagus, chopped
- ½ lb. Broccoli florets
- 4 garlic cloves, minced
- 6 cups bone broth
- salt and pepper to taste
- ¼ cup coconut cream
- 1 tbsp lemon juice
- 2 tbsp tarragon, chopped
You will need a large stock pot, food processor and a small mixing bowl.

Saute your onions over medium heat for 4-5 minutes until they are translucent. Sear the asparagus and broccoli until golden (3 minutes) and add the garlic. Trust your nose. Deglaze with bone broth and scrape up any gorgeous bits from the bottom of your pot. Bring the broth to a boil, and turn the heat on low. Simmer until your veggies are tender. This will take you about 20-25 minutes. Season to taste.
Purée your soup in batches to avoid a mess. In a separate bowl, whisk your lemon juice and coconut cream together.
Serve the soup in bowls, and drizzle the lemony coconut cream.
